Short answer
Barricades are built at the Barracks and placed at a battle's command post. There are three kinds — plain, Spiked and Fortified — in three tiers each. Every tier adds the same defense power whatever the kind (+2, +4, +6), so the kind only changes health and whether it hurts attackers. Tier I needs Simple Barricades research and costs 6 Bronze Nails, 2 Short Log and 2 Reinforced Plank.

Research for each tier
Simple Barricades — 60 red and 25 green, after Reinforced Plank. Unlocks Barricade I, Spiked Barricade I and Fortified Barricade I.
Robust Barricades — 90 red and 30 green, after Reinforced Beam. Unlocks the three tier II barricades.
Reinforced Barricades — 150 red and 75 green, after Steel Smithing. Unlocks the three tier III barricades.
Simple Barricades also leads on to Archers Tower.
Build costs
Tier I: 6 Bronze Nails, 2 Short Log, 2 Reinforced Plank.
Tier II: 8 Iron Nails, 4 Iron Detail, 2 Reinforced Beam.
Tier III: 8 Steel Screws, 4 Steel Detail, 2 Wooden Joint.
All three kinds in a tier cost exactly the same, so pick by stats, not price.
Health and defense power
Barricade I, II, III: +2, +4, +6 DP with 400, 600 and 800 health.
Fortified Barricade I, II, III: the same DP with 600, 800 and 1,000 health.
Spiked Barricade I, II, III: the same DP with 250, 450 and 600 health, but each zombie that hits one takes 3, 5 or 7 damage back.
Barricades have defense 0, so every enemy hit lands in full.
Spiked or Fortified?
For the defense power number alone it makes no difference — it counts tier, not kind.
Fortified holds longest, which suits the flagless fights where you must hold your base until the waves end, such as the Market Square Purge and the Final Battle.
Spiked trades health for damage and works best where your archers and squads finish off the zombies it has already hurt.

Placing and keeping them
A barricade is built as an item at the Barracks. Before a battle you place it at the command post; afterwards it returns to the Barracks.
In Sewer Brawl I and II barricades and towers add no defense power.
The War Supplier perk adds 10% health to every barricade.
