Short answer
Zombie Goo has two sources. Gunter sells it from the start of the game (base price 1 silver 50 bronze, 10 in stock), and almost every Town battle pays 4 to 10 of it. It is an alchemy ingredient worth 2 blue runes, used in 10 formulas including Reanimation Liquid, the potion you need to raise new zombies.

Buy it from Gunter
Gunter, the astrologer, stocks Zombie Goo from the very beginning — no trader level is needed.
The base price is 1 silver 50 bronze and he holds 10 at every trader level, so a small purchase covers an early alchemy habit.
He also buys it back for about 1 silver 12 bronze at normal stock, so extra goo from battles is never wasted money.
Battles that pay Zombie Goo
Nearly every Town battle lists goo among its rewards, which is why battle-focused players rarely need to buy it.
6 goo: Break Through to the Port, Eastern Districts: Active Scouting, Eastern Districts Purge, Market Square Purge and both Central Districts Purge battles.
10 goo: Closing the Western Floodgate, both parts of Closing the Eastern Floodgate, Battle at the Lake and both parts of Operation POTATO.
4 goo: Break Through to the Bathhouse Basement, the Final Battle and both Sewer Brawls. Sewerena pays 4 to 10.
Most city battles only run on Sloth day, while the sewer fights are open any day — our Victory Banner guide lists the other rewards.

What Zombie Goo is for
Goo is an alchemy ingredient worth 2 blue runes. It goes into 10 formulas: Reanimation Liquid, Berserker Potion III, Third Eye Salt, Umami, Alkali, Zombie Motivator Potion II and III, Spices, Explosive Dust and Lacquer.
Reanimation Liquid is the one that matters most: every prepared Resurrection Table needs it before a body can be raised.
Explosive Dust is the other headline use — it is half of the Dynamite recipe that opens the Old Mine.
Why it counts as a blue ingredient
Blue runes are the hardest colour to collect early, and most cheap materials are red or green.
Two blue runes in one stack of 99 makes goo an easy way to hit a formula's blue total without hunting rare parts.

Study it once for blue tech points
At the Study Table, Zombie Goo costs 3 Science and 2 Faith and pays +20 blue tech points.
The study takes 8 ticks (5 with a Researcher) at 2 energy per tick.
Do it with your first bought stack: blue points gate Theology and Anatomy research.
Storage
Goo stacks to 99 and fits the Alchemist's bag, the Universal bag and the Big universal bag.
Keep a stack near your Laboratory rather than in the keeper's pockets so it is at hand when you brew.
