Short answer
The Quarry is a work zone just south of your base. Research Zombie Stone Mining (70 red, 10 blue, after Stone Carving), then place a Zombie Stone Quarry from its build desk for 2 Piece of stone and 4 Wooden Plank. A zombie there digs 1 Stone every 8 ticks with no input. Marble needs a separate station and much pricier research.

Where the Quarry is
South of the Inquisition Base. Its fast-travel milestone costs 6 Faith to activate.
By hand it offers 3 Stone deposits, 3 Iron Ore deposits, a Marble deposit and a Berry bush.
The Old Mine entrance is here too, behind a blockage that takes 1 Dynamite. A chest inside holds 2 Reanimation Liquid, 2 Explosive Dust and an Inquisitor's Note II.
Zombie Stone Quarry
Unlock: Zombie Stone Mining, 70 red and 10 blue, after Stone Carving (60 red). It also unlocks the Porter Station.
Build: 2 Piece of stone and 4 Wooden Plank at the Quarry's build desk.
Work: Building mastery 2, 8 ticks, 1 Stone, and 1 red tech point to the zombie.
An Iron or Steel Pickaxe in the zombie's hand makes it work faster.
Zombie Marble Quarry
Unlock: Zombie Marble Mining, 120 red and 30 blue, after The Concept of Marble (80 red, 30 blue).
Build: the same 2 Piece of stone and 4 Wooden Plank. Work needs Building mastery 4 and makes 1 Marble every 8 ticks.
By hand marble is scarce — only 5 deposits in the world, 4 each — so this station is the real source.
Getting stone to your benches
The quarry zombie fills its own output; a Porter Station staffed by a second zombie carries it home.
The Zombie Supplier Station can also be placed in the Quarry to move goods between chests.
Every quarry worker counts toward the zombie limit, so check that page before staffing several.
What stone is for
Piece of stone: 2 Stone and 4 Wood wedge at the Stonemason's Workbench, Building mastery 3, makes 4 (the Mason perk has a 50% chance of 1–2 more). It goes into furnaces, the Kiln, church and graveyard upgrades and much more.
Stone also makes Stone Kit (Assembly Bench I or the Stonemason's Workbench) and Sculpture Kit I.
Marble makes Marble Kit, Sculpture Kit II and Marble Plate.
No trader buys raw Stone or Marble. The Builder sells Piece of stone if you are short.
The Zombie Miner next door
The Old Mine's Zombie Miner works the same way: 8 ticks for 1 Iron Ore and 2 Coal, no input.
