Short answer
There are two breweries. At your base, the Brewing Stand in the Vineyard Basement brews Beer, Mead and Soldier's ale, and the Fermentation Barrel next to it turns juice into cider on its own. In the Town, restoring the Brewery shop (technology Artisans II) opens a trader that sells drinks and grape seeds, buys your hops, wheat, bottles and juice, and pays Likes for them.

The Brewing Stand
Researching either Mead Making (80 green, after Beekeeping) or Brewing (80 green, after Vineyard) unlocks the stand.
Build it in the Vineyard Basement for 12 Brick, 8 Iron Detail and 2 Advanced Detail. It is a workbench, so it costs energy per tick, and every batch burns 10 Fuel.
A zombie can staff it once its Farming mastery is high enough.
Beer, Mead and Soldier's ale
Mead — 5 Honey, 5 Water, 10 Fuel. Farming mastery 4, 6 ticks, makes 5 (8 with the Brewer perk). Unlocked by Mead Making.
Beer — 5 Hops, 5 Water, 10 Fuel. Farming mastery 6, 6 ticks, makes 5 (8 with Brewer). Unlocked by Brewing.
Soldier's ale — 3 Red Mushroom, 5 Water, 10 Fuel (5 with Heat Saver). Mastery 4, makes 5. Unlocked by Soldier's food.
There is one free Beer in a chest in the Yard at the start of the game.
Cider in the Fermentation Barrel
Cider Brewery (30 green, after Cold Pressing) unlocks the barrel. Build it in the Vineyard Basement for 4 Wooden Plank and 8 Iron Nails.
It is an auto-crafter that burns nothing: 1 Apple Juice becomes Apple Cider, 1 Berry Juice becomes Berry Cider (mastery 5), and Blueberry Juice becomes Blueberry Cider (mastery 8). Each takes 6 ticks.

What the drinks are for
Beer lowers insanity by 12, Apple Cider by 7.
Beer is packed 12 at a time into Supply: Beer at Kitchen I, and any beer or cider can go into the Distillation Cube for Alcohol.
Three quests each take 2 Beer: Yummies, Comrade Donkey and Tales for Ales. Restoring Tavern II takes 20 Apple Cider.
The Town Brewery shop
Unlock Artisans II (100 red, 75 green), then restore the Brewery on a Workshop Courtyard plot for 6 Building Kit I, 4 Wooden Kit I and 2 Iron Kit I. It adds 2 village reputation.
Tier I sells 8 goods: bronze grape seeds and grapes, hop seeds, Berry and Apple Cider, Mead, Beer and a Food bag (5 silver).
Brewery II and III add silver and gold grapes and seeds and bronze, silver and gold wine — 15 goods at Tier III.
Its purse refills by 20 bronze a day at Tier I, 50 bronze at II and 1 silver at III.
Selling to it earns Likes
The Brewery buys Hops, Wheat, Empty Bottles, Apple and Berry Juice and grape juice, though it never sells them.
Those sales pay Likes up to a weekly cap of 15, 30 and 50 by tier. At Tier I, for example, 40 Empty Bottles a week earn 5 Likes; gold Grape Juice at Tier III earns 40 Likes for 20.
Its Town orders ask for Supply: Kitchen Utensils, then Cutlery II and Appliances II, paying 25 to 75 Likes each.
