Short answer
Flesh is removed from bodies at the Autopsy Table, and community wikis also list the Baker as a seller. Eating it restores 10 energy but adds 10 insanity. It is an ingredient for Minced Meat (made at a Millstone), Baked Meat and Live Bait. Check the corpse's white and red skulls first, because cutting parts out can lower its quality for good.

Where Flesh comes from
The main source is the Autopsy Table: place a body on it and extract parts. Community wikis also mention Pocket extract, which can turn up items carried by the corpse.
The Baker is listed as a seller, which helps early on before your morgue is busy.
Check skulls before you cut
Removing parts changes a body's white and red skull values, and guides warn the change cannot be undone. Look at the skull totals first and decide whether the body is worth more as a good burial or as raw materials.
What to use it for
Minced Meat is made from Flesh at a Millstone, and Flesh also goes into Baked Meat and Live Bait for fishing.
Eating raw Flesh gives 10 energy for 10 insanity, so it is an emergency snack rather than a meal. See the cooking recipes page for better food.
